Believe it or not, rhubarb is technically a vegetable, although it’s almost always enjoyed like a fruit.
Its history stretches back thousands of years to ancient Asia, where it was first cultivated for medicinal purposes. Over time, it made its way west along the Silk Road and eventually became a favorite ingredient in European kitchens.
By the 1800s, rhubarb had become a staple in North American gardens, especially throughout New England, where cool springs and cold winters create ideal growing conditions.
Today, it remains one of the first signs that summer is on its way.
